This Sunday we have our much-awaited pro football championship. We compiled a list of our favorite tasty treats to serve while watching the game (and commercials.)
Tried and True Queso
The key to Queso is the chip. Flimsy tortilla chips aren’t welcome at our table. These scooping devices need to hold a healthy amount of this cheesy goo!
Not Your Momma’s Salsa
5 lbs Roma tomatoes
1 lb Jalapenos, seeded
10 oz New Mexico chiles
1 Large White Onion
1 bunch Cilantro
1 head Garlic
1 can Chipotles in Adobo Sauce
Juice of 1 Lime Salt and Pepper (Optional)
Put chipotles in adobo sauce, garlic cloves, and lime juice in the food processor and puree. Set aside. Roughly chop the rest of the ingredients, put in the food processor, and pulse till finely chopped or to desired consistency. If desired, add chipotle/garlic/lime puree and mix well Season with salt and pepper.
Chicken Salad You Won’t Peck At
This Chicken Salad sandwich that’s way too easy and good to eat.
Ingredients
Rotisserie Chicken (cooked like for Walmart)
Celery
Salt and Pepper
Mayonaise
Bacon
Kings Hawaiian Rolls
Step 1. Shred the cooked rotisserie chicken into a bowl.
Step 2- Dice up a couple of celery stalks.
Step 3 – Add diced celery, salt, and pepper. (LOTS of pepper).
Step 4 – Cool chicken salad in the fridge
Step 5 – Cook about half a pound of bacon in the oven at about 400 degrees for about 17 – 20 minutes.
Serve with Kings’ Hawaiian Rolls. Spread a little mayo on the bun, add bacon, then chicken salad. Super Simple and SUPER good.

Everyone always asks me to make it for any party. I do substitute the water chestnuts for julianne carrots. Add chow menu noodles on top to add that extra crunch!

Save The Game With GOOD ICE and Great Tea
You can never go wrong by bringing a couple of bags of perfect fresh ice.
Bring a couple of jugs of sweet tea and a couple of pitchers of un-sweet tea. Above all, do not forget the sliced lemon wedges. (You will be the favorite guest.)
Fan Favorite Cheese Ball
We like to serve this with crackers but now that everyone is “dieting,” we also have thinly sliced cold cuts to substitute the cracker. The best thing this tastes even better at work during snackie snack time!
